Dahi Vada - a cool Indian starter for summer days
Dahi Vada is one of the most popular starters in Indian cuisine, and one of the few that’s always served cold. Dahi means yogurt, vada means lentil dumpling - and the dish is exactly that: soft, airy dumplings made from lentils soaked overnight and shaped by hand, then served in chilled, spiced yogurt with sweet tamarind chutney.
It’s creamy, fresh and completely without chilli heat, which makes it a good introduction to Indian food for anyone who prefers milder flavours. In India it appears on the table on the hottest days of the year, and at almost every festival and family gathering.
