Mango Parfait

Mango Parfait was a hit in the kitchen among the staff. We made 9 portions, and they were gone in a split second.

What is Mango Parfait? 🧡

Alphonso mangoes, slowly cooked down until they turn silky, with chunks of mango right through it. An Indian-French fusion.

Alphonso is the king of mangoes, and it is sweet enough on its own that nothing has to be added. The yellow colour comes from the fruit alone. No colouring, no preservatives, no added sugar. It has a lovely, natural aroma.

When the mangoes finally came into season, our parents would take the ripest ones and turn them into a kind of dessert for the family. Nothing complicated. Just the fruit at its best, and a little patience. It is the same idea, and it is the dessert we are presenting to you this September as our weekend special.

Dahi Vada

Summer in Copenhagen is short, so we make the most of it. Our Weekend Special in August is Dahi Vada - soft lentil dumplings in cold, spiced yogurt with sweet tamarind chutney. Light, cooling, and some of the best Indian food to start a summer meal with.

What is Dahi Vada?

Dahi means yogurt, vada means lentil dumpling. Together they are one of India's favourite summer starters - served cold, never hot. Creamy, fresh and lightly spiced. A different side of Indian food in Copenhagen.

Made before we open

Lentils are soaked overnight and slowly fermented. They are shaped by hand and gently deep-fried until lightly golden. Then they are soaked again, which makes them incredibly soft, airy and juicy. Finally they are served in creamy, chilled yogurt and topped with our sweet-and-sour tamarind chutney - a perfect balance of sweet, sour and spice.

Spinach is spinach, and aloo is potato. Simple in name - but this is a dish straight from the heart of Punjab, where it has been on family tables for generations.

Aloo Tikki is one of the flavours Amer (founder & CEO) grew up with — the kind of dish you find on busy street corners in India, sizzling and served straight from the pan.

What is Aloo Tikki?

Aloo means potato, and tikki is a small, round patty. Simple in name, but full of character — golden on the outside, soft inside, and packed with flavour!

How do we make them?

Each one is shaped by hand by our Indian chefs — especially for this weekend.

We boil the potatoes and mix them with fresh coriander, green chilli, cumin, ajwain, kasuri methi and our blend of warming spices — finished with a touch of rice flour and pan-fried until perfectly golden.

And one of our fusion creations — "mango mayo" — a simple but special blend: sweet, fruity, and the perfect match for the tikki’s warm spices.
