Biryani
Rice dish mixed with meat and/or vegetables.
Chutney
Typically fruit mashed with spices and naturally preserved with vinegar, sugar, or salt.
Curry
A type of stew or sauce. Originally from India, but today found in many forms across much of Asia.
Jeera
Cumin.
Madras
A city in South India. Madras dishes are typically quite spicy.
Masala
Spice.
Methi
Fenugreek seeds.
Paneer
A fresh, unsalted, unripened cheese. It is created by coagulating heated milk with lemon juice.
Tandoor
A cylindrical clay oven where food is cooked over 480° hot coals.
Tandoori
Food prepared with spices in a tandoor.
Tikka
Means 'bits' or 'pieces'.
