”To be honest we don’t really have a culinary tradition of salads in India,” Bindia’s founder and head chef admits. That was not something he really encountered before moving to the West. “And it’s not because we aren’t eating our greens in India – quite contrary – we eat it all the time.” But, as he points out, the curries are often so full of greens, that there isn’t really a nutritional need for a salad on the side.

Based on a wish to eat healthier, the salad has made its way into many Western kitchens and has simultaneously been elevated from a source of vitamins to a dish in its own right.

“To accommodate some of our guest, I have decided to make this salad. It doesn’t have too strong of a taste, but compliments our dishes just nicely,” the head chef concludes.
