Malai Vegetable Kofta Curry is a famous dish of North Indian Cuisine. It is mainly served as main course meal. Yet fried Koftas are also dished out as mouth watering appetizer. Ingredients for this recipe are quite simple. you just need to follow some easy steps to cook this delicious curry.

Malai Kofta Curry

Ingredients for making Kofta Balls

  • 4 boiled potatoes, mashed
  • 2 cups of steamed green peas
  • 2 cup cauliflower steamed
  • 2 carrots chopped and steamed
  • salt, to taste
  • 1 cup bread crumbs
  • 4 tablespoons gram flour
  • 1 teaspoon cumin powder
  • oil for frying

Ingredients for making paste

  • 4 chopped onions
  • 2 inch piece of ginger
  • 4 cloves garlic
  • 8 cashew nuts
  • 3 chopped green chillies

Ingredients for Curry

  • 1 teaspoon freshly ground garam masala
  • 4 cups homemade tomato puree
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon kasoori methi
  • salt, to taste
  • cream
  • oil for cooking


Directions for Malai Vegetable Kofta Curry Recipe

For making this mouth watering and scrumptious curry, we will begin with kofta balls. Add vegetables, cumin powder, gram flour and salt in food processor for making dough. Remember to make a coarse mixture not finely ground. Now you need to taste it. Add salt if it is needed.

It is the time to make lemon-like balls from this dough. Keep them to a medium size for cooking perfectly. Coat these balls evenly with bread crumbs. Now heat the oil in a skillet. Fry these kofta balls on a medium flame till they get golden brown. Remove them from skillet in a dish.

You can also bake them in oven using greased tray (if you don’t want that oil of frying)

Now you have to prepare the Kofta Curry

Heat two tablespoons of oil in a pan. Add chopped onions to it. After little frying, add ginger garlic paste. Stir fry it for a while until rawness fades away. Now you need to add puree tomatoes. Mix it properly and add the remaining ingredients of gravy as well. Let it simmer for few minutes, say 10 min. make sure that the tomatoes are well cooked and gravy has turned thick.

After getting thickened and well cooked gravy it is the time to put in fried kofta balls.  Now simmer them in gravy foe few good minutes. Transfer your curry to serving bowl. Garnish it with cream, coriander leaves and green chilies. Your delicious meal is ready to be served with chappati, paratha or rice.
