I’m Khawar Sulman, Bindia’s head chef. I grew up in Punjab in Northern India with two working parents who were seldom at home when it was time to prepare dinner. Nevertheless, the aroma from the kitchen of our neighbour, who belonged to one of the known culinary families (where ancient recipes and secrets were passed on from mother to daughter), was always in the air at dinnertime. The magical fragrance of their enchanting food was always just around the corner and was irresistible.
So why did my mother’s food never smell as good as our neighbour’s? I entered the kitchen to find out and have stayed here ever since. It’s where I now spend most of my life but it is a good place to be!
Jeg hedder Khawar Sulman, og jeg er chefkok her på Bindia. Jeg er opvokset i Punjab i Nordindien, med to arbejdende forældre, der sjældent var hjemme, når der skulle laves mad.Til gengæld kom nabokonen fra en af de kendte, kulinariske familier, hvor ældgamle opskrifter og hemmeligheder videregives fra mor til datter, så duften af den fortryllende mad, var altid lige om hjørnet.
Hvorfor duftede mors mad ikke lige så godt som naboens? Det spørgsmål fik mig til at gå i køkkenet, hvor jeg siden har brugt størstedelen af mit liv. Men det er et godt sted at være!
